Week 4 of the elimination phase of the AIP protocol diet and I would say 3 successes this week: the fish pie, the chicken casserole and the stuffed pork. The fish pie is an adapted recipe and although it’s made with coconut milk, but it’s not the dominant flavour. The chicken casserole is totally delicious and so handy using the boned chicken (broth and dinner in one). It was intended to be used for the lunch the next day but the left overs didn’t make it! And finally the pork, so quick to prepare. It tasted great but really, so quick to prepare! Perfect for the end of this busy week.
