So I thought this was going to be my final week of the AIP elimination phase. These 6 weeks have had their ups and down, but now it’s coming to the end I’m having second thoughts, maybe another couple of weeks, to be sure – to be sure! It’s hard to believe I’ve come this far, but with all the improvements in my UC symptoms, I’m worried about jeopardising that and putting myself back to square one. Is that even possible?
The new recipes I experimented with this week were a delicious thick, creamy beef stroganoff, with no dairy, flour or grains in sight. I also made a simple mushrooms on toast, using some potato farls (potato bread) that I’d frozen left over from week 3.
My husband did the shop this week and didn’t like the option on the shopping list to select your own veg for breakfast and Sunday lunch. So with his advice I’ve changed the format of the shopping list to list all the veg I brought and then give you those details here if you want to make a swap.
Breakfast smoothies I used avocado, berries, kale and carrots.
Breakfast hash I used courgette, red onion, mushrooms and sweet potato and
Sunday roast was served with AIP spuds, broccoli, carrots and parsnips.
Also the ‘slaw’ I tried this week was the Paleo Grilled Chicken Ranch Slaw Recipe- AIP Option but left out the chicken (for alternatives see my ‘slaw’ post).
