Kale and Sweet Potato Hash

This is delicious for breakfast. Even though it doesn’t follow my usual attempt to put red, green, white and orange on my plate for breakfast, the combination works too well not to post it.

Sweet potato and kale hash
Instructions
  1. Add the oil and sweet potato to a heavy based frying pan and cook over a medium heat for 5 minutes, stirring occasionally.
  2. Add the kale and water/bone broth to the pan and stir. Cover and continue to cook for a further 5 minutes, stirring occasionally until the potatoes are cooked through and the kale has started to wilt.
  3. Serve for breakfast or lunch with a side of your choice and some sauerkraut.
