Orange, ginger and honey turkey stir-fry

This recipe was inspired by http://www.rubiesandradishes.com/2015/12/16/paleo-orange-beef/, however as usual I couldn’t find all ingredients here in my usual food shops so I’ve made a couple of substitutions and additions.

This would also work well with pork, chicken or beef.

Alternative: Substitute the orange juice with lime juice for a less sweet sauce.

Instructions
  1. Heat oil in a large pan and add the turkey, onion and whites of the spring onions. Stir continuously until the turkey is browned.
  2. Add in the garlic, ginger and stir-fry for 2 minutes.
  3. Add in the carrots, honey, fish sauce and orange juice. Continue to stir-fry for 5-8 minutes to start to cook the carrots.
  4. Add in the broccoli and mushrooms and continue to stir-fry for a further 3 - 5 minutes until all the vegetables are cooked through.
  5. Add in the greens of the spring onions and fry for a further 1 minute.
  6. Serve with cauliflower rice or vegetable spaghetti.
